Westward Distilling teamed up with baker Ken Forkish and used his French sourdough levain yeast instead of standard yeast for fermentation. The whiskey is a blend of four vintages aged roughly 2-6 years, fermented for about two weeks.
A creamy, approachable single malt with an unconventional sourdough-forward character that brings bready, doughy notes alongside classic caramel and spice. The fermentation innovation creates a rustic, earthy complexity that distinguishes it from typical Westward expressions.
